This type cooking comes under the heading of "bachelor food".
Here's a quick and easy meal for the lazy or uninspired. It serves one person perfectly. And it tastes damned good.
Dig out 10 or 12 of those shrimp you've left in the freezer. The medium size shrimp. The ones that look way bigger in the grocery than after you cook em'.
Open a can of Progresso Chicken and Sausage Gumbo. Pour into a medium sized pan and place on the fire, fairly low. Shake a little of your favorite seafood boil into the gumbo. Drop in a touch of tabasco and a tiny bit of W'Shire. Then cook low while you ready the shrimp.
Boil the shrimp in your favorite boil seasoning. We use Everglades, Old Bay, Zatarain's herbs or liquid, Emeril's Essence or whatever is in the cabinet. Throw in as much as you dare. Don't throw the frozen shrimp in until the water has come to a boil. Then leave for six minutes.
Take the shrimp to the sink and run them under cold water. Cool them down just enough to peel. I don't devein some do. Peel the shrimp and throw them in the gumbo pan. If you choose to use larger than bite size you might want to cut them in half.
Let the shrimp cook in the gumbo just a couple of minutes. The heat should be low to medium. Make sure you stir. It will stick to the bottom if left alone. You're just trying to bring the gumbo's seasoning into the shrimp. They're done we don't want to cook them but a couple minutes or they become rubbery.
There's several ways to serve this. I usually have it as soup in a bowl. Don't forget to have lots of crackers on hand. If you go a step further you can accommodate another person. Just cook up a little minute rice and throw a couple slices of garlic bread into the broiler.
Dump the rice in a big bowl and pour the gumbo over it. Careful, there's lots of liquid here. Now chow down with your garlic bread, rice and Cheater's Gumbo. That's good eatin'.
Takes longer to eat than cook.
